The cucumbers are growing so fast! It's hard to keep up with them but tonight Mike and I picked several buckets and then started the pickling process with the ones that were small enough.

We scrubbed and cut the ends off all the cucumbers.

The ones that were a little bigger we either sliced in half or in fourths to make them smaller.

While we were doing this we also started a few more things. We mixed up the brine (2 quarts of water to 1 quart of vinegar and 1/3 cup pickling salt) and turned that on high. Then we put the lids in another pan on the stove and turned those on high.

We also put the jars in hot water in the sink to get them heated up.

Mike cut up the onions and garlic and once the lids and brine were boiling we were ready to start!

The process then was pretty easy. We each grabbed a jar, packed it with cucumbers, added three cloves of garlic, one slice of onion and one sprig of dill and then filled it with brine and put the lid on!

Look at this handy-dandy magnetic lid-grabber Mike has so you don't have to burn your fingers in the boiling hot water!

We continued that process until we ran out of brine and had to run to town to get more vinegar (Heinz vinegar!). Once we had more and it was boiling we did a few more jars to make a total of 13 quarts! In a few weeks we'll get to see how they turned out :) Here's the recipe we used if you're interested:
